It's that time of year, when the hedgerows are brimming with white fragrant Elderflowers.
It's incredibly easy to make your own Elderflower Cordial, which will last you for the whole year, until you can pick again next year!
What you will need:
- A large saucepan
- a sharp knife
- a potato peeler
- a muslin or tea towel
- 2.5kg white sugar- either granulated or caster
- 2 unwaxed lemons
- 20 fresh elderflower heads, stalks trimmed
- 85g citric acid (you can buy this from local chemists- ask for food safe)
- 1.5 litres of water
Put the sugar and water in your saucepan and gently heat, without boiling, until the sugar has dissolved. Stir occasionally.
Pare the zest from the lemons and slice the lemons into rounds.
Once the sugar has dissolved, bring the syrup to the boil and then turn off the heat.
Wash the elderflowers, to remove any bugs.
Add the elderflowers, lemons, zest and citric acid to the pan and stir well. Cover and leave to infuse for 24hrs.
Line a colander with your muslin and pour the liquid in, over a large bowl. Decant into sterilised bottles. Easy! You can also freeze it, in ice cube trays.
It's delicious with just water, or popped into a glass of fizz, drizzled over fruit, or added to desserts. Enjoy!
